All food service facilities are required to submit a complete permit application, pay permit fees and be available for inspections. The Department of Watershed Management (DWM), Site Development Division, is responsible for all grease trap plan reviews.  

Before obtaining a plumbing permit, all food service facilities are required to submit three (3) copies of the following items:

(1) Site plans – Must show boundaries of property.
(2) Floor plans – Must include a list of all equipment in the kitchen, show equipment 
      connections and the tie into the main sanitary line.
(3) Contact person for plans, including a name, email address and telephone number.
(4) Specifications of the proposed grease trap must be depicted at its location on the plans. 
      Grease trap details must include: 
      •  Company name 
      •  Specify if grease trap is existing or proposed 
      •  Size of grease trap 
      •  Model number 
      •  A picture showing the cross section of the grease trap.
